Can you believe that May is right around the corner? Besides the onslaught of summer fun headed our way we have three big holidays to celebrate in May. Memorial Day means a grilling extravaganza at our home, Mother’s day is a perfect brunch event and of course Cinco de Mayo requires a Mexican food feast! Since May 1st is almost here, I’ve rounded up a collection of yummy ideas to plan your own Mexican Fiesta to celebrate Cinco de Mayo.
Naturally I included a couple Southern Arizona originals like Sonoran Dogs and cheese crisps and my personal favorite choices: grilled fish tacos and tortilla soup. Most of the country is familiar with cheese quesadillas which I did include in my recipe collection but here in Tucson, the better choice is a cheese crisp! A thin tortilla baked to a crisp with melted cheese and a possible a few light toppings. I favor chopped onions but it’s great plain too. My favorite style of quesadilla is a corn tortilla topped with melted Asadero cheese and homemade salsa like my dad always made me. Yum!
