Soup is one of my favorite things to eat. I was so excited to see a simple black bean soup recipe in a recent issue of Costco Connection. It never occurred to me how easy it is to throw together. I thought I’d share my version of Easy Black Bean Soup, just in case you didn’t realize how easy it is to make either.
Easy Black Bean Soup
- 2 cans of black beans (we use organic)
- 1 cup of salsa (we use medium)
- 2 cup of broth (chicken, beef and vegetable all work)
- 4 tsp taco seasoning
- 1 onion – diced
Start by sautéing the onions with a little olive oil. While the onions are cooking, blend the beans and salsa together until you reach a desired consistency. Then add the onions once they are translucent and blend again. Depending upon the size of your blender you can then add the broth and taco seasoning and blend one last time. Or just add everything to a soup pot and stir well. Heat through and serve.
Optional: Garnish with chopped cilantro, shredded cheese, sour cream or tortilla chips. Or dip a fresh tortilla in it like I do!
For an easy weeknight meal, prep the night before. Refrigerate the ingredients after you’ve blended them. Then pop everything into the crockpot and heat on low the next day.
