Easy Minestrone Soup

I’ve shared before about how important ending childhood hunger is in our country. As a former teacher, I know hunger negatively affects the way children learn and of course as a mother it breaks my heart that any child goes hungry.  Unfortunately the problem is global, with 165 million children worldwide chronically malnourished. This results in 1 death every 15 seconds and lifelong problems for millions more. It’s estimated that malnourished children could earn up to 20 percent less in adulthood. That’s a huge economic disadvantage in any country! You can read more specifics in the recently released Food For Thought report from Save The Children.

Supermom in Progress

Even having the means to feed my children healthy foods, I find it difficult at times. I am working on being a Supermom in the Kitchen. I love finding quick and easy recipes that sneak extra veggies into my kids’ food. I found soup is one place that they are least likely to question vegetables. Yay for soup – A Supermom’s secret weapon!

I love this recipe. My brother and SIL shared a version of it with me a few months ago. I tweaked it a little, adding a few extra veggies and using the veggie fortified pasta. It’s a simple and easy minestrone soup with only 8 ingredients!

Easy Minestrone Soup Recipe

Easy Minestrone Soup Ingredients

  • Chicken Broth (32 oz)
  • Spaghetti Sauce (24 oz)
  • 2 cans White Kidney Beans or substitute your family’s favorite – drained and rinsed
  • 1 box Rotini or Shells – I like the veggie fortified kind
  • 2 Onions
  • 1 Zucchini
  • 1 Yellow Squash
  • Parmesan Cheese


  1. Start cooking the pasta – this is usually the longest part of the prep.
  2. Dice and sauté the onions, zucchini and yellow squash.
  3. Heat a soup pot on medium high and add the veggies and beans.
  4. Add jar of spaghetti sauce and equal amount of chicken broth (3/4 carton).
  5. Add more chicken broth if desired (depending upon preferred consistency).
  6. Cook until heated through ~10 minutes.
  7. Add the cooked pasta just before serving – this prevents it from getting mushy.
  8. Top with parmesan cheese to taste.
