I love grilled fish. One of my favorite ways to eat it is fish tacos! It’s fresh and yummy, filling and healthy! Last week, we kicked off the New Year with yummy Baja fish tacos at my dad’s house!
We used frozen white cod from Costco. Once it’s defrosted simply brush both sides with olive oil, and sprinkle on garlic, paprika and sea salt. Then it was ready for the grill!
We made two versions of the Baja Sauce, one a little spicy and the other without spice.
Baja Sauce Ingredients
- 1 cup light mayo
- 1 cup light sour cream
- 1 t garlic powder
- 6 T chopped cilantro
- 2 T lime juice
- 2 t adobe sauce (La Morena Chipotle Peppers in Adobo Sauce) – more or less depending upon spice level
- Salt & Pepper to taste
Mix all the ingredients up and salt & pepper to taste.
Picked Red Onions
The pickled red onions bring a nice pop of color and flavor to the tacos.
Pickled Red Onions Ingredients
- 2 large red onions
- 1/2 cup red wine vinegar
- 1/4 cup apple cider vinegar
- 1/2 cup white vinegar
- 1/2 cup lime juice (~7 limes)
- 1Tbs Kosher Salt
- 3 Tbs sugar
Bring all ingredients (minus the onions ;-)) to a boil. Boil until everything’s completely dissolved and set sauce aside. Quick blanche the onion (~1 minute in boiling water). Pour the pickling sauce over the onions, covering them completely and refrigerate for at least 2 hours. A full 8 hours would be best.
