Pantry Challenge & Menu Planning!
Part of getting back on track financially is making sure we aren’t wasting food.
A Pantry Challenge is the first step. We are trying to use up the foods stashed in the freezer and other foods from the holidays. Plus we ended up with several bags of random groceries from my dad’s Christmas visit.
We did pretty good last week. With leftover pork loin we had sandwiches and I made this “leftover roast” Mexican casserole. I had to modify the recipe a bit using flour tortillas, pinto beans and red/yellow mini peppers. I was shocked it turned out so well. I may have to try and make more casseroles! Plus we made beef stew with meat dug out from the freezer.
Besides working through leftovers and groceries we already have, we have committed to making a meal plan each week. I know it’s a good idea but somehow we always fall off the bandwagon. Hopefully we can stick to it!
This week our plan is left over beef stew, sandwiches, breakfast for dinner, taco soup, and shredded BBQ chicken.
