With just a few days before Christmas, I’m scrambling to finish all the last-minute things I want to get done. Christmas cookies are always on my holiday to do list and while frosted sugar cookies are my personal favorite, I like to make a few fun and festive options to add to my cookie trays. These green and red velvet sandwich cookies are super easy to make using a box of cake mix!
I had a box of Duncan Hines Holiday Velvet cake mix which is cool because it contains both red and green velvet cake mix. You could easily recreate this recipe with just red velvet cake mix though.
Holiday Red Velvet Sandwich Cookies With Cream Cheese Frosting
- 1 box of red (or green) velvet cake mix
- 2 eggs
- 6 T Butter – melted
- 1 container of Cool Whip Frosting (made with cream cheese)
Preheat the oven to 375 degrees. Combine the eggs and melted butter with the cake mix until a soft dough forms. Place 1″ size balls of dough on greased cookie sheets. Since these will be sandwiched together, it’s important to try to make the cookies a similar size. Bake 8 or until edges are firm. Once COMPLETELY cool, pair up the cookies of match size and slather a generous amount of Cool Whip Cream Cheese frosting in between. Done.
I personally love how cookies turned out pairing one green velvet with one red velvet cookie but they would still be festive using all red velvet too. Keep in mind these cookies need to stay chilled because of the frosting! I personally love easy cookie ideas that don’t require 10 different ingredients I never had on hand.
