Thanksgiving is just around the corner and that means it’s pumpkin spice season. I created these super easy, caramel pumpkin spice cookies after picking up just a few ingredients. They are easy enough to make anytime (like tonight) but also festive enough to bring to Thanksgiving dinner.
I started with a 17.5 oz sugar cookie mix but you could use your favorite sugar cookie recipe if you like. Stir in a package of JELL-O Pumpkin Spice Flavor Instant Pudding and then 1 cup of Kraft Caramel Bits. Drop tablespoon drops onto a parchment paper lined cookie sheet.
Bake for ~11 minutes at 375°. After they’ve cooled, melt 1.5 oz of BAKER’S White Chocolate and drizzle on top of each cookie. It’s fairly easy to pipe it from a plastic bag with a small corner cut off. I decorated a few with holiday designs, but a random drizzle design totally works too. I like that it’s easy to customize the design, so these cookies could work for a wide variety of holiday and party themes. My cookie mix said it’d make 24 large cookies, but I ended up with 28 due to the added ingredients.
I found all the supplies I need to make this at the Holiday Bake Center at Walmart. There are plenty of yummy ingredient options at great prices available. You could easily substitute a different flavor of JELL-O Pudding and create your own fun cookie combination. Are you ready for some festive and easy holiday baking this season?
