Did you know that Saturday, April 12th is National Grilled Cheese Day? Personally I am a HUGE fan of grilled cheese sandwiches. I often order them when we eat out, just like a little kid. 🙂 Sometimes I even order a fancy grilled cheese sandwich like when I was in San Diego for the girls weekend! Most often though, I just eat them at home paired with cream of tomato soup!
Today I am celebrating National Grilled Cheese Day by sharing a simple twist on the traditional grilled cheese sandwich. I know some people like to go all out and add extra toppings like bacon. While bacon may be yummy, I don’t think the extra calories are necessary. With great bread and varieties of cheese, your grilled cheese sandwich is awesome without anything extra added!
First off I love grilled cheese sandwiches on sourdough bread. I will make due with white bread, or Texas toast but honestly it’s just not the same.
I also love using REAL cheese, not the plastic wrapped American singles that Peter prefers. One of my favorite types of cheese to use is Colby Jack. It’s two flavors in one!
On this sandwich I actually spiced it up a bit and added a little bit of Pepper Jack cheese too. To keep it on the “healthier” side, I sliced the cheese thin and measure it out. I used 1 oz of Colby Jack and 1/2 oz of Pepper Jack.
I also made one sandwich without butter on the bread and “grilled” it on my George Foreman. It created these awesome grill marks on the bread and did toast it up a bit.
