It’s no secret that I am a HUGE peppermint fan. I must make it through the crazy pumpkin fall season until I can indulge in one of my favorite treats… which is pretty much anything peppermint. My chocolate peppermint ice cream cake is definitely a favorite but it’s not something I whip up in 30 minutes nor something I want to have sitting in my freezer tempting me all the time! I prefer to make that cake for family events – like Thanksgiving this year. 🙂 I do however have a fabulously easy recipe chocolate peppermint cookies to share. It only requires 4 ingredients and is so easy to make because I use chocolate cake mix and peppermint pudding mix!!
Easy Chocolate Peppermint Cookies
- 1 box of chocolate cake mix
- 1 small box of peppermint pudding mix
- 3 large eggs
- 1 stick of butter (softened)
- Peppermint sprinkles or decorations – optional
These are seriously so easy that even your little kids can help make them. Dump all the ingredients together and mix together. Form 1-inch size balls and place on ungreased cookie sheet. Bake at 350 degrees for ~9 minutes. I had to keep checking my cookies because the dark brown color made it difficult for me to decide.
I left some cookies plain and topped some with fun peppermint sprinkles before baking. It’s totally up to you!
These cookies come out super soft, moist and very chocolate-peppermint-y. You can easily keep them for a week in the fridge IF they last that long… they didn’t in my house! 😉
