I love celebrating Pi Day, it’s a fun silly holiday that every math geek can get behind. Plus it’s an easy way to encourage kids to love math with fun Pi Day ideas. My father in law is a big fan of cherries and chocolate, so I actually made these easy dark chocolate cherry pie bites for his birthday. They are just enough of a treat that you can enjoy without feeling guilty and easy enough to share (if you want). 😉
Dark Chocolate Cherry Pie Bites
- Refrigerated Pie Crusts
- Cherry Pie Filling
- Dark Chocolate Chips
Roll out the pie crusts and use a round cookie cutter to create tiny little circles. One for the top of each pie and one for the bottom. Dab 1-2 cherries with sauce in the center of each bottom crust and then top with a second crust.
Pinch around the edges and if you are a math geek like me, cut a pi symbol into the top of each pie bite.
Bake at 450 for 8-10 minutes. I skipped using an egg wash since I planned on drizzling chocolate all over the top.
I melted dark chocolate chips (carefully in the microwave) and then poured it into a ziplock bag with the end snipped off. I liberally drizzled dark chocolate all over the top.
Perfect bite sized dark chocolate cherry pie bites!
