We’ve been eating a lot more fresh spinach lately. It’s reasonably priced and seems fresher than other leafy options. It also makes a great salad if you are sick of regular lettuce or romaine!
Easy Spinach Salad
- 6 oz baby spinach – I buy the bagged stuff
- 1/3 C queso fresco (could substitute feta)
- 1/2 C chopped walnuts
- 1 apple diced
Simple Salad Dressing
- 1/4 t pepper
- 1/2 t salt
- 1 T sugar, or alternative sweetener
- 3/4 C olive oil
- 1/2 balsamic vinegar
Peter prefers a bottle of light dressing, he isn’t a fan of my homemade version. The key to making this salad dressing is adjusting the ingredients to suit your taste buds. Use less olive oil or more pepper, whatever floats your boat. 🙂
