I finally made my own Veggie stock! It’s been on my to-do list for YEARS!!
Ok that might be an exaggeration but I really have been meaning to try it. In fact the “Veggie Trash” started taking over my freezer and I was forced into the project.
Yes I said Veggie Trash. Go and laugh, my mom does.
But honestly that is what the leftover cut up veggie parts are to me. Trash.
Or at least they used to be! Now there is a great purpose for it!
I stick veggie ends (left over after chopping and dicing) into a ziplock bag in my freezer. I also toss in any veggies just past their prime.
A fresh and “free” way to make my own homemade vegetable stock!
And it’s easy to make. Seriously easy.
1. Wash all veggies and dump them in a pot.
2. Cover with water
3. Add whatever seasoning you like. I used garlic, bay leaves and pepper.
4. Bring to a boil.
5. Cover and let simmer for 1 hour.
After you let it cool a bit, strain out the veggies and it’s ready to go!
I divided it up and froze most of it in freezer bags based on how much I usually need for our regular recipes.
I also froze a few batches in muffin tins. These will work great when I only need 1/2 cup or so…
