I have been dreaming of this ice cream cake for a couple of years now. It all started when a friend shared her Super Easy ice cream cake method (aka Trish’s Awesome Ice Cream Cake Recipe).
It starts with 4 simple ingredients that you choose and allow you to create the best flavor combination.
- Cake Mix
- Ice Cream
- Topping: Caramel, Hot Fudge, etc.
- Mix In: Candy, Cookies, etc.
However, I have DISCOVERED the best combination possible. The most awesome combination imaginable.
At least if you love Peppermint! <— And your crazy if you don’t!!
- White Cake Mix <—Chocolate would work but I wanted the focus to be peppermint not chocolate….
- Peppermint Ice Cream (Dreyer’s consistently makes it around the holidays)
- Hot Fudge Topping
- Candy Cane Joe Joes (or Oreos) <—My biggest hang up was a good peppermint mix in that wasn’t candy canes.
Start by making 2 round cakes. Place one finished (and cooled cake) into your spring form pan. The 2nd cake is extra…
Ice Cream Frosting
Place 1/2 the ice cream in a bowl and allow to soften.
Smash the cookies. I suggest using a munchkin armed with a plastic bag.
Frost the cake with the ice cream once it has softened up a bit.
But be careful, at this point you want to work quickly. You can already see my ice cream getting pretty melty in the picture.
Then add 1/2 the cookies to the top. I would do this step quick… my artist was a perfectionist and my ice cream was melting quick!
Then quickly pour half the hot fudge across the top.
I heated it up in the microwave for about 30 seconds first.
Freeze for several hours.
Then repeat the Ice Cream Frosting, Cookie and Hot Fudge Steps above. Quickly.
And freeze again for several hours.
Pull it out a few minutes before you serve to make it easier to cut but don’t keep it out too long…
This was the aftermath, halfway it’s pillage at our Christmas lunch.
I know it’s a gooey mess, but it was an AWESOME! It was so yummy, I am drooling just thinking about it. In fact my FIL said it was the BEST thing I have ever made. <—Granted I am not know for my kitchen skills, but still….
These ice cream cakes are seriously the easiest thing to make. You are only limited by what flavor combinations you want to make.
And better yet you can watch for deals and make this for super cheap! Last year I made one $1 ice cream cake for Quinn’s b-day by utilizing deals and coupons and being flexible on the flavor combination!
