We had turkey & ham sandwiches for dinner a few nights ago and our go-to side would normally be chips or cottage cheese..
And we didn’t have any cottage cheese on hand..So we were stuck with chips right??
I did a little thinking about what we had on hand, including the leftover broccoli from the veggie tray my dad gave us and realized that we had the makings of pasta salad!
Except that I have never made pasta salad before.
I know what you are thinking… any idiot can throw together a pasta salad!
And you’re right! This idiot did! Ha.
Pretty darn good and so easy. Seriously why haven’t I tried making it before?
The one complaint Peter had was that it was heavy on the pasta and light on the veggies.
A legitimate complaint. I have a hard time with veggies. I seriously add way too many or too little. I hesitated adding more because I was SURE Peter would bitch about veggie overload…
Instead I get the opposite response.
Besides patting myself on my back, I wanted to share the simple details with anyone else that is a cooking/kitchen novice!
I love that I made it with things I typically have on hand!
- Pasta <—Free pasta is a couponer staple!
- Black Olives – Cut in 1/2
- Grape tomatoes – Cut in 1/2
- Yellow Bell Pepper – Diced
- Broccoli – just the tops and diced up small
- Feta Cheese
- Italian Dressing <—easier than doing my own olive oil/vinegar/spice blend, which by the way scares me because I know I will screw that up!
After I cooked the pasta I just tossed everything together. Again I didn’t have enough veggies and I should have made it a couple hours earlier so that it could have chilled in the fridge before dinner, but overall it was a major success.
