I thought I would share one of our favorite go-to recipes, it’s quick and yummy. It is definitely a go-to meal for us because we always have the ingredients on hand and is so easy to make.
It’s funny because we don’t even have a real name for it, it’s always that Meat-Tomato-Pasta Dish. This recipe has been modified over the years from my dad’s basic recipe of ground beef, canned diced tomatoes, pasta shells.and parmesan cheese.
I modified it over the years starting with the “meat”. In college, I made it with ground tofu for Peter. This necessitated the addition of tomato sauce because plain ground tofu is bland. Once he returned to carnivore status we had adapted to the tomato sauce addition, so we kept it. Now our “meat” is ground turkey or extra lean ground beef.
I am always looking for ways to sneak extra veggies into our meals and adding fresh spinach to this meal is an easy way to do so. And speaking of veggies I prefer to use veggie pasta for even more veggies.
Another option for “beefing” up the nutritional value is to use whole grain pasta instead. It’s easy to change things a little, here or there depending upon your family’s tastes.
This is the version I made on Monday.
- Garden Delight (Veggie) Rotini
- 1.25 lb. Ground Turkey
- 8 oz. can of tomato sauce
- 1 can of diced tomatoes
- 1 bag of fresh spinach
- ~ 1/3 can of black olives, sliced
- ~ 1 cup Shredded Parmigiano-Reggiano
- Seasonings: garlic/salt/basil/oregano
Start by boiling pasta. Once cooked to desired tenderness toss with a little olive oil to prevent sticking.
Brown the turkey and then add in the tomato sauce and diced tomatoes. Once heated up, add the fresh spinach and let it cook down. Then add olives and seasoning.
Toss everything together including the cheese.
