I’ve partnered with Gaslamp Popcorn today to share a super yummy and festive holiday treat, Peppermint Popcorn Balls! I am a huge fan of both peppermint anything and easy recipes, this no-bake dessert checks both boxes for me and Quinn loved helping me make them!
From peppermint ice cream cake to peppermint cookies, I just can’t get enough peppermint treats during the holidays. Obviously, you can customize popcorn balls to many flavor combinations but it’s Christmas which means it’s peppermint everything for me. While I will tolerate white chocolate when paired with peppermint, I much prefer milk chocolate. If you prefer a white chocolate peppermint combination you can adjust the recipe accordingly.
Peppermint Popcorn Ball Ingredients
- 10 cups Gaslamp Sea Salt & Olive Oil Popcorn
- 10 oz marshmallows
- 1 tbs Butter
- 1/2 tsp Peppermint Extract
- 1 cup chocolate candies
- Peppermint sprinkles
- Paper straws or popsicle sticks
Start by prepping a baking sheet with wax paper and set aside. Then add the popcorn to a large mixing bowl. Melt the marshmallows and butter in a large glass bowl in the microwave for approximately 1 minute. The marshmallows will expand when heated, be sure your bowl is big enough to contain them.
Once melted, stir the peppermint extract into the marshmallow mixture. Pour the mixture over the popcorn and add 1/2 cup of chocolate candies and a generous amount of peppermint sprinkles. Carefully combine popcorn mixture with a spatula or greased hands.
Once the popcorn and marshmallow mixture is combined, form small popcorn balls and place them on the baking sheet. Push a popsicle stick or paper straw (I cut mine in 1/2) through the center to create a fun popcorn pop!
Let the kiddos decorate the outside of the popcorn balls with the rest of the chocolate candies and more peppermint sprinkles.
To make them easier to eat and transport, place each peppermint popcorn pop into a cupcake liner. We made 15 popcorn balls but that will vary depending on how big you make your popcorn balls. You can store them in an airtight container for a few days, but they are best when served within 24 hours.
