Soup is one of my favorite things to eat, even in the summer time. One of the easiest and tastiest soup recipes I make is black bean soup. I’ve partnered with Bush’s Beans to share my easy black bean soup recipe. Go ahead and try it and let me know what you think!
The great thing about this recipe is that it’s basically all things we keep on hand. Naturally, the base of black bean soup is black beans. I stock up on Bush’s Black Beans at my neighborhood Walmart location. I love that I can grab all my essential groceries quickly. I also like to use Walmart’s Grocery Pickup option, I shop from home and an employee loads the groceries into my car when I go pick it up. It’s easy peasy!
Black Bean Soup Ingredients
- 2 cans of black beans
- 1 cup of medium salsa
- 2 cup of chicken broth
- 4 tsp taco seasoning
- 1 medium – large onion
- Avocado – optional
Dice the onion and then sauté it with a little olive oil. While the onions are cooking, blend the beans and salsa together until you reach the desired consistency. Then add the onions once they are translucent and blend again.
Then add everything to a soup pot: blended bean mix, broth and taco seasoning and heat through.
That’s about it. You can garnish the soup with lots of yummy options like chopped cilantro, shredded cheese, sour cream or tortilla chips. I am personally fond of adding avocado, it’s a bit of freshness to the soup and counters the slight spiciness of the soup. A fresh flour tortilla also pairs nicely with it.
This might be the easiest soup I make! And it can be adjusted to taste and consistency. If you like the soup a bit chunkier, then blend the beans less. Use a hot salsa or more taco seasoning if you like your soup spicier, or less if you like it milder.
Crockpot Black Bean Soup
For an easy weeknight meal, prep the night before. Refrigerate the ingredients after you’ve blended them. Then pop everything into the crockpot and heat on low the next day.
