Who’s excited for the arrival of Monsters University in theaters tomorrow?
Quinn and I had a chance to see an advanced screening last week and we LOVED it. It was full of lots of humor that both kids and adults can appreciate. It’s really the perfect movie for the whole family to see. I was a little concerned about how scary it might be for Elliot as a 3 year old but I think he’ll do just fine! Quinn and I already have plans to take him and Peter to see it soon. And to celebrate the return of Mike and Sulley, I made Monsters University Ice Cream Cone Cupcakes!
Monsters University Cupcakes
These ice cream cone cupcakes are super easy to make. Seriously, easy!
The hardest part is finding ingredients in the right colors to match the Monsters University theme.
I found ice cream cones in fun bright colors. There was no green but the blue worked well for Mike (with his blue university hat in the new movie) and purple for Sully. Then I used a box of white cake mix and food coloring to make bright green and blue/green cake batter.
I think the trickiest part is filling the ice cream cones neatly and consistently with the right amount of batter. You can see my baked cupcake cones were all over the place for height! I suggest “attempting” to fill about 2/3 of the way up the cone.
Don’t worry if your cupcakes come up a little short, extra frosting can fix that. 😉
I used white frosting and then just coated the tops with bright green or bright blue sprinkles for the base of my design. Mike was pretty easy, one big green eye and he was good to go!
Sulley on the other hand frustrated me to no end. Seriously. I tried to make Sully’s face with 2 blue eyes and horns and they turned out ridiculously silly. Naturally I am sharing my Sulley Disasters with you. I can laugh about it now, and so can you. 🙂 I attempted horns with the white frosting gel, cutting them out of a Wilton sugar sheet and also using mini white morsels. Clearly, none of them worked. At all.
My boys had no problem eating my practice cupcakes though. 🙂
What I did up doing for Sulley was using purple sprinkles to create the spots on his blue fur!
I love that in the end both designs were super simple. It’s a fun way to celebrate Monsters University and easy enough the kids can make them. 🙂

Monster Munch: Dip pretzels into melted blue candy melts. Sprinkle with purple nonpareils. Let pretzels cool on parchment or wax paper in the freezer. For candy coated popcorn, place freshly popped popcorn in a large mixing bowl. Using the leftover melted blue candy melts, drizzle over the popcorn and mix together with a rubber scraper until all of the popcorn is coated. Serve in a paper cone for a special little treat that all monsters like to eat!
