We love no-bake chocolate cookies around here, it’s an easy recipe with simple ingredients that we always have on hand. I probably make them more often than I should. 😉 Check out these fun Star Wars Wookie Cookies I made from our no-bake cookie recipe to celebrate the new Star Wars movie! This weekend I made a no bake peanut butter cookie recipe.

No Bake Peanut Butter Cookies Recipe

No-Bake Chocolate Peanut Butter Cookies are a long time family favorite recipe. Lately, Peter has been trying to avoid chocolate so he asked me to drop the cocoa and make a batch of just peanut butter no bake cookies. The ingredients are essentially the same with a few quantity changes and the addition of vanilla.

No Bake Peanut Butter Cookies

  • 2 C sugar
  • 1/4 C butter
  • 1/2 C milk (we use skim)
  • 1/2 C peanut butter
  • 1 tsp vanilla
  • 3 C oatmeal (quick or regular)

Start by mixing the sugar, butter and milk in a large saucepan over medium heat. Bring to a full boil and let it boil for one minute stirring constantly. Remove from heat and stir in peanut butter, vanilla, and oats. Quickly drop spoonfuls onto wax paper and let cool. Try not to eat too many at once!

Peanut Butter No Bake Cookies Recipe

These cookies are really amazing. I love the regular version with cocoa but somehow removing the chocolate made them even better! Keep in mind there is still quite a bit of sugar in them, so they can’t be called healthy but they are perfect for anyone avoiding chocolate or those that just love peanut butter!
