With the new Minions movie just released in theaters, I was ready to celebrate with a fun dessert idea. These fun Minion ice cream sandwiches are perfect as an easy dessert at a Despicable Me or Minions party!
All of the ingredients are pretty easy to buy and you can even bribe your kiddos into separating out the M&M’s by color. Or splurge and just buy bags of blue M&Ms and yellow M&Ms.
Minion Ice Cream Sandwich Ingredients:
- Ice Cream Sandwiches
- Blue and yellow M&M’s
- Assorted blue and yellow sprinkles
- Wilton candy eyes – large and small
You could make a bunch of these ahead of time for a fun party snack, or let the kids make them and turn it into a Minion party activity and dessert!

How to make Minion Ice Cream Sandwiches
Start by letting the ice cream sandwiches sit out 5-10 minutes so they soften a little but aren’t completely melted. This will allow you to press the decorations in place. Then line a cookie sheet with parchment paper or wax paper. Place the competed ice cream sandwich creations on the baking sheet and freeze for an hour before serving.
